In the course of the past six years Johannes Pfefferkorn has been taking over responsibility for its future step by step. Being a skilled manager, hotelier, chef and sommelier, the general manager of this legendary 5-star hotel puts great emphasis on a harmonious combination of tradition and innovation as well as luxurious-romantic holiday feeling. L.L. ⁄ The word “romantic” sounds very clichè. What does “romantic” mean to you personally and how is the concept applied in your hotel? J.P. ⁄ In the context of our hotel cooperation, “romantic” means that we step a way from fuzzy interiors, from over-the-top lifestyle and move back towards a comfortable, cozy atmosphere that provides a home to our customer. And you get all of this in a traditional, family-owned hotel. For me personally, the term “romantic” applies to a nice evening with my girlfriend, in a candlelit room or in front of a crackling fire, with a nice glass of red wine where you can simply enjoy the night and get carried away. L.L. ⁄ You joined the family business quite early. What was your motivation to continue the family tradition? J.P. ⁄ I’ve always wanted to cater and care for guests, I’ve always sought contact with people. There is nothing more beautiful than the happy expression in the eyes of a person after a perfect holiday – and this was my motivation. L.L. ⁄ A generation change in a hotel is not just continuity; maybe it also has elements of a welcome discontinuity to it. What is the younger generation’s task? Should it consciously choose a new path? J.P. ⁄ It surely is important to consciously take fresh steps but I also think that preserving and continuing what generations – in my case five generations – have worked on and achieved and to try and

improve this further, is an important point. Of course, one has to invest, to let one’s own lifestyle merge with that of the hotel, in order to be able to realize one’s own ideas. L.L. ⁄ The Romantik-Hotel Krone saw a lot of works done this summer, right? J.P. ⁄ This year we invested nearly 4 m Euros into the existing house and next year we’re going to invest another 3 m in an extension. We redid all the restaurants, the bar, the famous K.Club, we created a new ski-room with a rental service for our hotel guests, the reception was redecorated as well as the lobby. Plus we invested quite a lot into technologic changes behind the scenes. L.L. ⁄ The term “the young and wild” is much used in gastronomy these days. Would you consider yourself one of them? J.P. ⁄ Ah well, young and wild sounds good, I guess it somehow applies to all of us. In my case though, I’d say that my wild days are past. I’d call myself “young and innovative”. L.L. ⁄ How do you like to unwind after a stressful day? J.P. ⁄ With a glass of red wine and a cigar. L.L. ⁄ What are your spontaneous associations with these five terms?
